Vegetables sauteed in garlic and oil

SAUTEED VEGETABLES

½ cup flavored olive oil (see recipe below)
1 bunch of cooked broccoli, broccoli rabe, or escarole
Salt and pepper to taste

Heat the oil in a large heavy sauté pan. Stir in the vegetables and sauté for about 3 minutes or until hot. Season with salt and pepper and serve.



FLAVORED OLIVE OIL

1 cup extra virgin olive oil
4 cloves of garlic peeled and crushed

Heat the oil in a small heavy saucepan on medium-low heat. Add garlic and barely simmer until the garlic is just barely beginning to brown. Remove and discard the garlic and pour the oil into a clear container and reserve, at room temperature, to use as flavored oil for frying and sautéing.
